1835 COFFEE LAB, A SPECIALTY COFFEE SHOP IN GALAPAGOS THAT RE-OPENS WITH MORE FORCE POST COVID-19

Today I am going to share some pictures that I took in the specialty coffee shop 1835 Coffee Lab. Gino Sorrentino and Cynthia Jouvin, coffee lovers, are owners of this venture, with whom I share a great friendship and enjoy good talks with a coffee.

I remember the ideas shared to improve service, productivity and generate a new concept for the coffee shop Despite all the pandemic situation, they remained active in the process.

Today, after 5 months of being isolated by COVID-19, they reopened their doors with all the bio-security measures and a re-engineering of the menu that has as a priority the inclusion of products from local enterprises and a set of good practices to strengthen the well-being of the community and boost its economy.

V60 extraction method offered in the coffee shop, a name given to it by the opening angle of its cone, with which a soft drink is obtained and which highlights the acidity characteristics of the coffee. It is one of my favorites.

Below I share some of the photographs on the menu and some portraits that we took with Evelyn Altamirano, Queen of Santa Cruz, who supported with her image on this occasion.

Panino El Renacer: tasty smoked loin, caramelized onions, fresh cheese, marinated zucchini and a mix of green leaves from the island. Simply exquisite.

Evelyn enjoying the Japanese Siphon extraction method, a system that manages to highlight all the characteristics of coffee, such as aroma, body and texture, intensifying its flavor due to the long contact of coffee with water at high temperature.
Tostada Residente, its combination of fresh cheese, homemade pesto, tomato slices, marinated zucchini and a mix of green leaves from the Islands, make it more than delicious and one of the favorites.

And to finish your visit, don't forget a delicious 1835-style dessert.
